Carolina Siqueira Franco Picone

Carolina Picone is Assistant Professor at the Department of Engineering and Technology/ FEA-Unicamp. She holds a BSc in Food Engineering (Unicamp, 2005), and MSc and Ph.D. in Food Engineering (Unicamp, 2007, 2012). Her teaching responsibilities include Mechanical of Materials and Food Quality Control. She works with modulation and characterization of colloidal interactions in hydrogels and emulsified systems aiming bioactive encapsulation and delivery. She has experience on development and characterization of nano and microstructures composed of protein, polysaccharides and surfactants with diverse functionalities including the production of healthier and more sustainable foods and processes.
