Professor of Biochemistry and Nutrition (Central University) and member of Lund University teaching and research staff. Tovar has dealt for over 30 years with biochemical and nutritional aspects of carbohydrates and proteins, including clinical studies on the efficacy of functional foods and diets as modulators of cardiometabolic disease risk. His publication record includes more than 100 peer-reviewed articles. He is member of the Scientific Advisory Committee of the International Foundation for Science
