Welcome to 14th Latin American Symposium of Food Science!

Impact of Food Science on Health and Disease

 

The sequence of editions of the Latin American Symposium on Food Science, since 1995, gives us the privilege, as researchers, of having an observatory of the development of the Food area, the impact on the Food industry, the social and economic importance of the area in the national and international spectrum.

As we can see, innovation in the food and agriculture sectors can include new technological processes, packaging, new food additives, etc. New solutions are being demanded either to reduce or prevent changes caused by microorganisms, oxidation of food components and enzymatic and non-enzymatic reactions.

However, healthier and more nutritious foods must be produced with increased organoleptic properties. Because alongside this concern of consumers, who are increasingly informed, they must provide the pleasure of consuming the food.

Food Science as the basis for Food Technology and Engineering must be considered in view of the transformations that modern society is going through and the requirements of the world population.

Brazil as a whole can play an increasingly relevant role in the Food area on the international stage. The enormous diversity of Food, from north to south of the country, the presence of postgraduate and graduate courses in the area of Food (Science, Technology and Food Engineering) of international level, the strong and active Food Industry, indicate us that there is a highly challenging scenario to be worked out.

According to the social and geo-political transformations countries are going through, new challenges must be considered, as already reported by large global food industrial groups, such as: FAO Zero Hunger Program, Health and Welfare, Responsibility in production and food consumption, climate effect, search for new unconventional food sources, new ways of producing fresh and processed food, the impact of functional food and its correlation with health, the digital age and its impact on consumption relations etc.

Brazil and other countries in Latin America can and should interact more in a consortium to seek innovative solutions, exchange of experience and developments in the NOVA food industry.
