Welcome to the IX International Conference on Food Proteins and Colloids (CIPCA 2023)
After a long period of virtual events, we are pleased to announce the IX International Conference on Food Proteins and Colloids (CIPCA 2023), to be held in the city of Rio de Janeiro, from May 9 to 11, 2023.
IX CIPCA comes from a series of periodic international meetings, which began in 1998. Since the 2017 edition, the event has been called Conference, due to the great international participation. Over the years, CIPCA has managed to bring together a multidisciplinary team of scientists from different countries, especially from the Iberoamerican community.
The event will involve plenary conferences by renowned researchers, as well as the presentation of scientific works in oral and poster form, distributed in sessions divided in the following topics:
- Interactions between biopolymers and their impact on the structure;
- Interfacial Engineering;
- New processes and ingredients;
- Food colloids as a vehicle for bioactive compounds: digestibility and bioavailability;
- Food colloids and health (bioactive peptides, allergenicity);
- Colloids for edible films.
It will be a great opportunity for interaction and exchange of experiences between researchers from different institutions, which may result in partnerships for the development of innovative solutions involving the use of proteins and colloids in food systems.
