João Paulo Fabi

João Paulo Fabi, Ph.D., is an Associate Professor at the School of Pharmaceutical Sciences of the University of São Paulo. He is a pharmacist-
biochemist with a Ph.D. and postdoctoral training from the same institution and has held research appointments at the University of Nottingham (UK) and
Wayne State University (USA). His research focuses on the discovery of new bioactive compounds derived from polysaccharides and on their technological
applications. His basic and applied scientific studies range from the molecular basis of chemical and biochemical modifications of polysaccharides to the
health benefits associated with the intake of bioactives in their natural form, chemically modified, or nanoengineered as dietary supplements. He is a
specialist in the use of 2D- and 3D-bioprinted cells and cellular structures to assess the absorption and metabolism of bioactive compounds. He is also a
specialist in simulating human digestion using in vitro and in vivo platforms. He is one of the coordinators of the Food Research Center (FoRC), which is a
CEPIX at USP, a CEPID funded by FAPESP, and an INCT supported by CNPq. He is the coordinator of the Interunit Graduate Program in Integrated Food
Systems. He holds a Level 2 Research Productivity Fellowship from CNPq.
